Hi guys, this is how I spent the Christmas day, deal hunting at Target and Baking Vegetarian Gingerbread cookies with my kiddos.

For the Vegetarian Gingerbread cookies:
Replace egg with 1/3rd to 1/2 Avocado
Replace egg and molasses with 3/4 avocado and 1/4 cup water
If you want to go completely vegan, replace the butter with additional equal quantities of avocado and salt as needed (about 1/2 tspn)
This is a generic Gingerbread cookie recipe. You can use this, or a mix as I used in the video.
3 1/4 cups all-purpose flour
1 tablespoon ground cinnamon
1 tablespoon ground ginger
3/4 teaspoon baking soda
3/4 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
3/4 cup unsalted butter, softened to room temperature
1/2 cup packed brown sugar
1 large egg
1/2 cup unsulfured molasses
1 1/2 teaspoons vanilla extract
Mix into a dough, and chill in fridge for 1/2 hr. Bake the cookies at 350 degrees F for 8 – 10 minutes.
For the recipe with avocado, increase the cooking time to 15 minutes or until desired color is achieved.

I’ve seen recipes where they replace the egg with apple puree. I will try the avocado with some sugar cookies
Oh yeah! I forgot about that. I think a combination of the apple puree and Avocado would be great as it would give both the fat and the liquid.
