This vegan and gluten free mini blueberry and lemon cake tastes so good and it’s so easy to make!! Its very moist and has little sugar in it. I made a little glaze to go on top as well.
Ingredients:
1/3 cup of water
3/4 cup gluten free oat flour
1/3 cup of brown sugar
1/4 tsp salt
4 tbsp of oil
1 tsp baking powder
1 tsp vanilla
1 tsp lemon juice
1/2 tsp baking soda
1 tsp cinnamon
Blueberries
Glaze:
1/4 cup icing sugar
2 tsp vanilla almond milk
1/4 tsp of vegan margarine (I used Earth Balance)
1 tsp vanilla
