Replace your salad with this vegan rainbow flatbread that takes just 10 minutes to make.

Vegan Rainbow Pizza

2 whole-wheat pitas
1/2 cup vegan shredded cheese
6 broccoli tops, chopped
2 tablespoons green peppers, diced
2 tablespoons yellow peppers, diced
2 tablespoons orange peppers, diced
2 tablespoons cherry tomatoes, sliced
2 tablespoons red onion, diced
2 tablespoons blue potatoes, cooked and diced

Preheat oven to 375ºF.
Place pitas on a baking sheet and bake for 2 to 3 minutes, or until warmed through. Sprinkle cheese on top of the flatbread. Top with rows of the vegetables in rainbow order: red, orange, yellow, green, blue, purple.

  1. Riiiiight. Just call it a flatbread sandwich. There’s nothing pizza-like about this other than being flat and layered. Fold it in half instead of cutting it and you’d get more out of a bite. But I guess that isn’t trendy enough. I’m sure it’d be a tasty flatbread sandwich with a melty toast quality to it. Now I’m craving some flatbread.
