Ingredients:

3 ripe pears, peeled, halved and cored.
170g flour.
60g ground almond powder.
1/4 teaspoon of baking soda (bicarbonate of soda).
1/2 teaspoon of baking powder.
150g vegan sugar.
1 teaspoon of vanilla extract.
160g of vegetable margarine.
Cinnamon, to taste.

Making A Pear Cake:

While you start preheating the oven to 170ºC/325ºF, prepare the cake pan by either greasing it or lining it with baking (parchment) paper.

Melt the margarine in a saucepan over low heat.

Add the sugar and whisk it together.

Remove the saucepan from the heat and add the flour, almond powder, baking soda and baking powder to the mixture.

Mix it together gently until it’s smooth, and add a little bit (roughly a half cup) of soy milk to avoid dryness.

Set aside two pear halves and dice the remaining pears into small pieces.

Add the pieces to the cake batter and mix together with a spoon until just combined.

For the remaining pear halves, slice them into smaller but neat slices for decorating the cake.

Pour the batter into the prepared cake pan.

Arrange the pear slices in an orderly way on top of the cake and sprinkle them with the cinnamon.

Place the cake into the oven and bake it for 3/4 of an hour or until a toothpick inserted into the cake comes out of the cake clean.

Remove the cake from the oven when it’s done and allow it to cool on a wire cooling rack until it reaches room temperature pear cake is ready serve it.
