INGREDIENTS

190g/1½ cups plain flour
190g/¾ cup peanut butter
50g/¼ cup caster sugar
50g/¼ cup light brown sugar
4 tbsp golden syrup
1 tsp vanilla extract
¼ tsp baking powder
120g/½ cup vegan butter
A pinch of salt

METHOD

Preheat oven to 170°C and line a large tray with baking paper. Cream the butter, caster sugar and brown sugar in a large bowl. Add the peanut butter, golden syrup and vanilla extract and mix well to combine. Sieve the flour, baking powder and salt into the bowl and fold into the mix to form a dough. 

Use a spoon to make about 12 balls of dough and place them onto the tray, with a small gap between them so they have room to spread. Press down with a fork in a criss-cross pattern to flatten the dough. Bake for 10-12 minutes until golden brown. Remove from the oven and leave on the tray for 1 minute, then move onto a wire rack to cool.
