Happy Veganuary guys! I hope that the extra exposure you’ve been getting to the idea of being vegan is making you think about how easy it could be to make some changes. You no longer need to miss out on so much of the good stuff if you choose to go plant-based and these cupcakes are PROOF!
RECIPE…
For the cupcakes…
245ml soy milk
110ml vegetable oil
100g smooth peanut butter
1/2 tbsp apple cider vinegar
240g plain flour
200g caster sugar
1 tsp baking powder
3/4 tsp bicarbonate of soda
3/4 tsp salt
Jam for filling (whatever flavour you fancy!)
For the Vegan Peanut Butter ‘Buttercream’
Add 100-150g smooth peanut butter to my Vegan Buttercream –
