  1. I’ve tried the Daiya vanilla cheesecake. I found it to be slightly gritty & ridiculously overpriced.

  2. I’m curious Gretchen, how come you didn’t make your own cream cheese? Ease of preparation? Cost? I cannot wait to make this!!

    1. Hi Liz! I am working on another online course where I will cover all homemade pantry items like cream cheese, butter etc.
      Most homemade recipes that you will find for cream cheese is going to be from a nut (cashew) base. I will hope to perfect both kinds, nut based and non nut…. but It’s a work in progress.
      So yes to answer you here, the cost of cashews is cray cray, and the tofutti is great for baking and very cost effective!
      I do have a cashew cheesecake here though-

  3. That daiya cheesecake looks so pathetic beside yours. Your cakes are the best. You get to choose the best quality ingredients and definitely know what you’re eating. I’m 100 % with your cheese cake.

  4. Every time I make your cheesecake I think of my father.. cheesecake was his favorite and I use to make him the non vegan version every week.. I didn’t know how to make the vegan version back then. After he died I couldn’t make cheesecake at all anymore because it reminded me of him too much, sounds silly but I just couldn’t. On his birthday and in his honor, I made yours for the first time since he passed away. I know without a doubt he would have loved it, I just wish he could be here to try it. It was his favorite desert and now every time I make it, I think of him. Anyway, thanks for such a wonderful recipe. ❤️
