It is a vegan chocolate and walnut brownie with pip and nut chocolate peanut butter filling and dark chocolate and coconut cream ganache. It is iced in renshaws extra which is suitable for vegans.
Recipes
Vegan chocolate and walnut brownies
Ingredients
500g plain flour
700g demerara sugar
150g broken up Sainsbury’s basics dark chocolate
100g plain cocoa powder
2 tsp baking powder
2 tsp salt
500ml water
120g walnut pieces
500ml vegetable oil
2 tsp vanilla extract
Instructions
1. Preheat the oven to 180 C / Gas mark 4.
2. Mix all ingredients in a large bowl. Stir in the walnuts last
3. Grease and line an 18” by 12” tin (or halve the recipe and use an 8” square tin – for a treat! ! Pop them in cupcake cases)
3. Bake for 25 to 30 minutes. The top should turn Matt when it is ready and the brownie should be slightly shrunk away from the edges of the tin. Allow to cool for a few hours before using.
Vegan ganache
Melt 800g chopped up Sainsbury’s basics dark choc either over a Bain Marie or in microwave for 30 second bursts stirring between each.
Heat 150ml coconut cream for 1 min in microwave on full power (800 Watts)
Stir cream into choc
Cover the ganache surface with cling film
Chill for an hour and use
