I wanted to challenge myself to have a three course vegan dinner party for four people and only spend the equivalent of $20 USD. I wanted to make sure that everything is delicious and looks a lot fancier than it costed! I ended up making a vegan caesar salad with crispy chickpeas, vegan lasagne with eggplant and tofu ricotta, coconut mug cakes with coconut milk drizzle and an extra little thing – bruschetta with vegan creamy pesto.
