Ingredients:
— 1 cup all-purpose flour
— 1/4 cup oats (optional – can use all-purpose flour instead)
— 1/8 cup unsweetened apple sauce
— 1/8 cup unsweetened non-dairy milk (I used coconut)
— 1/4 cup coconut oil
— 1/2 cup brown sugar
— 1/4 tsp salt
— 1 tsp vanilla extract
— 1 tsp baking soda
Instructions:
1. Preheat oven to 375 degrees.
2. In a bowl, mix together the all-purpose flour, oats, salt, and baking soda and set aside.
3. In a separate bowl, whisk together the coconut oil, sugar, and vanilla extract.
4. Once mixed well, add in the applesauce and non-dairy mix.
5. Follow up with the dry ingredient mixture and mix until combined.
6. Fold in the chocolate chips.
7. Use an ice-cream scooper or spoon to transfer the cookie dough onto a baking sheet.
8. Bake for 9-10 minutes and cool at least for 10 minutes before enjoying!
