Thought it was time to introduce myself and I have a vegan chocolate chip cookie recipe to share!
RECIPE:
INGREDIENTS
1 1/2 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
pinch of salt
2/3 cup vegan butter, melted
1/2 cup white sugar + 1/2 cup brown sugar
2 tsp vanilla extract
1 tbsp maple syrup
1 flax egg
2 tbsp almond milk
1/2 cup vegan chocolate chips
DIRECTIONS
1. Preheat oven to 375°F.
2. Combine flour, baking soda, baking powder and salt. Set aside.
3. Combine melted vegan butter, the sugars, vanilla, maple syrup and flax egg. Add it into the dry mixture.
4. Add in the almond milk. If it’s too dry add a bit more almond milk in small amounts.
5. Incorporate the chocolate chips. Feel free to add in more than 1/2 cup.
6. Cover a baking sheet with parchment paper. Place balls of dough onto the baking sheet. I fit 16 onto mine.
7. Bake for 18 minutes (or less as each oven is different, but keep your eye on them).
8. Cool and remove from baking sheet.
