Chicago-Style Deep Dish Pizza
For the crust:
1 1/2 cups all-purpose flour
1 cup whole wheat flour
1 Tbs baking powder
Pinch salt
! Tbs olive oil
3/4 cup water
Mix all dry ingredients with a mixer until well incorporated. Add olive oil and water. Mix well; add water as needed, if too dry. It should hold together without being too sticky. Press into a lightly greased 14” deep dish pizza pan (see link below to order) with crust covering the sides of the pan. Bake 400°F for 8 minutes.
For the sauce:
5-6 cloves garlic, minced
16 oz tomato sauce
3 oz tomato paste
1/2 cup water
1 tsp sugar
2 1/2 tsp Kosher salt
1 1/2 tsp black pepper
1 Tbs oregano
Sauté garlic for 1-2 minutes; until fragrant. Add tomato sauce, tomato paste, water, sugar, salt, pepper, and oregano. Simmer for 5-6 minutes on medium-low heat. Set aside.
For the toppings:
1 small red onion, sliced
1 red bell pepper, diced
7-8 mushrooms, sliced
2 big handfuls fresh spinach
8 oz non-dairy mozzarella
1/2 cup canned artichoke hearts, diced
1/2 cup black olives, sliced
Sauté onion and bell pepper for 4-5 minutes. Add mushrooms and cook for another 3-4 minutes. Add spinach and cook until wilted. Set pan aside.
After crust is precooked, remove from oven to build your pizza. Add non-dairy cheese as the base of the pizza, cover with toppings of your choice, and then pour sauce over the top and spread evenly. Bake at 400°F for 45-50 minutes. Allow to cool for at least 10 minutes before cutting.
