This vegan pumpkin spice cake recipe is easy, moist, sweet and full of the flavors of the fall and of the Caribbean. This butter loaf works great as an after school / back to school snack or treat for kids, mini breakfast muffins, or is great with a pumpkin spice latte for pumpkin-inspired breakfast. To create this recipe, I veganized my Trini Granny’s classic sponge cake recipe and added pumpkin puree, pumpkin spice and Angostura bitters to achieve a spice cake that tastes like a grandmother from the islands just finished baking it up. ☆Infinite Trini-Style Vegan Pumpkin Spice Cake☆

-Dry Mix-
1 3/4 cups of Immaculate Organic flour
2 tsp of Clabber Girl baking powder
1/4 tsp salt

-Wet Mix-

1/2 cup unsweetened Silk vanilla Almondmilk/cashew milk
3 shakes of Angostura Bitters (Trinidadian flavoring for drinks, available at local/international grocery stores and online)
1 tbsp agave

-Pumpkin Spice Mix-

1/2 cup of Earth Balance butter (European style, for that Kerrygold taste)
1/2 cup of Wholesome Sweet sugar
6 tbsp of garbanzo bean liquid (liquid from a can of garbanzo beans)
3 tbsp of Farmers Market Organic pumpkin puree
1/2 tsp of each: pumpkin spice, cinnamon spice
1/8 tsp of ground nutmeg
1 tsp Simple Truth vanilla

-Directions-

1. Dry mix: Combine flour, baking powder and salt in one bowl.
2. Pumpkin spice mix: Cream butter and sugar in bowl. Add garbanzo liquid (add one tablespoon at a time and mix thoroughly after each tablespoon), vanilla, pumpkin puree and all spices. Mix thoroughly.
3. Wet mix: Combine milk, bitters and agave.
4. Slowly add Dry mix to Pumpkin spice mix alternately with the Wet mix until all ingredients are mixed into the pumpkin spice mix batter. (About 2-3 rounds)
5.Pour batter into 2 parchment paper-lined loaf pans and bake at 350 degrees for 45 mins, or until an inserted fork comes out clean. (Oven times may vary.) | Cupcakes/muffins might only need 20 minutes. Just keep checking to be sure they bake to your preference.

    I think this might be a dangerous recipe to have Cris…it looks so delicious that one piece will definitely not be enough 🤪 But it does have a vegetable in it, so that’s my definition of healthy 😉

    1. Lol! TRACEY!! That’s the phrase I always say to the kids when they act like they can’t wait for treats to cool down. “Just admire it!” 😂😂😂 And it IS dangerous! I only ever get one slice out of the two loaves. Slices go missing and no one can ever explain. I have no footage of anyone eating it because it never survives the “cooling” process. 😩😩😩 #datbakerlife

  2. Hey fam!! I can make these as muffins with a little bit of shredded carrots and pecans. Then eat it while drinking golden milk. Yum yum yum! Ill save the latte for a treat to be enjoyed by itself.

    1. That sounds so delish! We LOVE carrots over here too. And coming up soon our 10-year-old is gonna film his rice and peas recipe. That’s one of his signature dishes 😜. It is literally the best rice and peas anywhere, lol! He is too pumped to show off his skills 😂😂😂.
