Spitzbuben andCut-out cookies are Addy’s favorite Christmas cookies. She loves using my cookie cutters, the new ones from California as well as the old ones which I inherited from my Bavarian Oma. Like with the strudeldough, we can substitute butter with avocado. Here is the recipe:
Heat oven to 350 F.
Lay out cookie sheets with parchment paper.
In a food processor knead 4 cups of whole wheat pastry flour with 3/4 cups sugar, 1 1/2 tsp baking powder, a pinch of salt, 1 cup ripe Haas avocado (1-2 avocados depending on size), 1 tsp vanilla, 2 flaxeggs (2 tbsp flaxseed mixed with 6 tbsp water), 4 oz of apple sauce. Knead on a floured surface after it forms to a ball in the machine. If it is too sticky, add flour or add water if it is too dry. It should be a non-stick elastic dough. Wrap in plastic and let stand for 1 hour in room temperature. Roll half of the dough out to a square on a floured surface. Cut out cookies and put them on the parchment paper on the cookie sheet. For Spitzbuben cut out two hearts or two stars. In one of them cut out the center with a little heart or star. Put the heart without cut out on the cookie sheet. Put some red jam (i used marionberry) or melted vegan chocolate morsel on the center and cover with the matching cookie that has the cut out. Coat with some soy milk with a brush. Bake simple cookies for 12 minutes and the Spitzbuben for 15 minutes until golden brown. Let cool for 10 minutes.
Take Spitzbuben out and sprinkle with powdered confectionary sugar like snow
Glaze for the ;simple cookie: Mix 1 tbap lemon juice with enough confectionary sugar to have a thick pasty glaze (about 1/4 cup). Add organic food color or your choice or leave as is and brush cookies with it. Sprinkle with colored sprinkles, chocolate sprinkles, garnish with walnut halves or as you like. You can also coat the cookies with melted vegan chocolate morsels. Enjoy!

What is the slurry? It it a flax egg?
In this case, 2 tbsp flax seeds and 6tbsp water – I explain it in the video when I noticed that I did not do so when I added it to the dough. You caught this glitch. LOL Thank you for watching.
