Spring has sprung and so has our intense desire for carrot cake. So deep a desire that we had to make our signature gluten free and vegan carrot cake THREE WAYS: bundt, cupcakes and layer cake. Follow along as Katarina shows you how simple fresh and home made carrot cake can be (made with real carrots, is there any other way?).
INGREDIENTS
a) Cake
– One Dolled Up Desserts Premium 12 Karat Carrot Cake Baking Mix
– 2/3 cup sunflower oil
– 2/3 cup dairy free milk mixed with 1 tbsp apple cider vinegar
– 1/4 cup maple syrup
– 5 tbsp water
– 1.5 cups grated carrot
– OPTIONAL: 1/2 cup coconut flakes, raisins, cranberries, chopped nuts or chopped canned pineapple
b) Icing
– 1/2 cup non-dairy butter (Earth Balance)
– 1/2 cup non-dairy cream cheese (Tofutti)
– 4-5 cups icing sugar
– OPTIONAL: chopped nuts, toasted coconut flakes
