Ube Halaya – Purple Yam Cake
(Makes 8 1/2-inch cake)
3/4 pound purple potatoes, cooked
1/4 pound taro, cooked
2 cups non-dairy milk
1 cup coconut milk
1/2 cup sugar (can substitute)
2 tablespoons Earth Balance
1/2 cup toasted coconut, garnish

Hey Patty, I actually cut that part of the video out, but I have pictures of it on my blog post: . And yes, a typical recipe calls for 1/2 cup of sugar, but I substituted to my liking…that may be different for everyone.

Oh well, I think the coconut milk will be prevalent here, but I guess with any tuber, if you find the good ones, they’ll be nice and sweet:)
