I love mushrooms. Mushrooms just have such a rich earthy flavor and stuffing them is easy to do. Of course, these Vegan Pizza Stuffed Mushrooms top my list!
Pizza Stuffed Mushrooms
12 mushrooms (300 g)
3 tbsp tomato paste
3 tbsp water
1 tbsp olive oil
1/2 tsp sugar
1/2 tsp salt
1/2 tsp dried basil
Vegan Mozzarella recipe here:
Preheat oven to 375˚F (190˚C)
Clean mushrooms and remove stems. Using a small spoon, scoop out inside of mushrooms to allow enough room for filling.
In a small bowl , mix together the tomato paste, water, olive oil, sugar, salt and basil.
Top each mushrooms with 1 tablespoon tomato sauce, 1 tablespoon vegan mozzarella.
Bake 18-20 minutes or until mushrooms are cooked and cheese is browned and bubbly.
Cool slightly before serving.

When I made the vegan cheese recipe for your pizza, mine turned out slightly gritty and not as “white” as yours. Am I doing something wrong?
La Cuisine de Jean-Philippe maybe. I hope so. I know the next time I make it, if there are any remnants of cashews, I’m going to sift the cheese mixture. I just use Bobs Red Mill Nutritional Yeast. I just wish it could look as good. Lol
Good question! Maybe the color of the nutritional yeast has something to do with it!
