Today I am going to show you how to make a Pina Colada cake! So get ready to dive right into summertime feels as this cake is moist and full of pineapple flavor and its only matched with my crazy delicious coconut cream cheese frosting! The flavors are perfect together. Oh did I mention this is oil-free? Yep, you can thank me later! You can take this recipe and make 24 cupcakes, or you can half it exactly and make a single layer cake or 12 cupcakes!

//RECIPE:
Cake Mix (2-layer Cake)
Wet Mix:
1 1/2 cup Pineapple Juice
1 1/2 cup (or two 5.3 oz yogurt cups) Vegan Yogurt (I used Kite Hill Almond Milk Yogurt)
3 tsp Vanilla Extract
1 tsp Almond Extract
1 cup Crushed Pineapple Pulp
Dry Mix:
3 1/2 Flour (I used Bob’s Red Mill GF Baking Flour)
2 cups Cane Sugar
4 tsp Baking Powder
1/2 tsp Salt
1/4-1/2 tsp Ground Turmeric for color (optional)
Coconut Cream Cheese Frosting (Enough for 2-layer Cake):
10 1/2 tbsp Vegan Cream Cheese (I used Kite Hill Cream Cheese)
1 tbsp + 1/2 tsp Lemon Juice
1 1/2 tsp Coconut Extract
1/2 tsp Vanilla Extract
3 1/4 cup Vegan Powdered Sugar
1/4 tsp Salt (optional)
Toppings: Dried Pineapple & Walnuts or anything you like!
