RECIPE
3/4 cup organic sugar
3 Tbsp. oil (light olive, canola, coconut, or other neutral oil)
2 Tbsp. almond milk (or other non-dairy milk)
2 tsp. vanilla extract
1 1/2 cups gluten-free oat flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 Tbsp. unsweetened cocoa powder
2 Tbsp. crushed freeze-dried strawberries
A few drops red or pink food coloring (optional)
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add sugar, oil, almond milk, and vanilla extract. Stir well. Add oat flour, baking powder, baking soda, and salt. Stir well. Divide the dough equally into three bowls. To one of the portions of dough, add cocoa powder, and stir well. To another portion, add crushed freeze-dried strawberries, and stir well. Add food coloring, if using, and stir in. To shape the cookies: take a small piece of each dough, roll together, and press onto a baking sheet. Bake 10-12 minutes. Makes one dozen cookies.
