RECIPE
3/4 cup organic sugar
3 Tbsp. oil (vegetable, canola, or other neutral oil)
2 Tbsp. non-dairy milk
2 tsp. vanilla extract
1/2 tsp. peppermint extract
A few drops green food coloring
1 1/2 cups gluten-free oat flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup chopped vegan chocolate
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add sugar, oil, non-dairy milk, vanilla extract, peppermint extract, and green food coloring. Stir well. Add oat flour, baking powder, baking soda, and salt. Stir well. Add vegan chocolate, and stir in. Scoop and press the dough onto a baking pan. Bake 8-12 minutes. Makes one dozen cookies.
