These are sooooo good, omgggg. They literally taste like a fricken mimosa. I am so, so proud of this recipe!

MIMOSA SUGAR COOKIES RECIPE
INGREDIENTS:
-1/2 C vegan butter, cold
-1 C organic cane sugar
-1/4 tsp sparkling wine extract
-1/3 C pure orange juice, no pulp
-Zest of 2 large oranges
-2 1/2 C all-purpose flour
-1/2 tsp cream of tartar
-1 tsp baking powder
-1/2 tsp kosher salt
DIRECTIONS:
-In a standing mixer, with the paddle attachment, beat the cold vegan butter, organic cane sugar, and sparkling wine extract over medium-low speed for about 3 minutes, or until it is light and fluffy.
-Add in the orange juice and orange zest and beat for another minute. The mixture will separate, but don’t worry, this is normal.
-In a bowl mix together the flour, cream of tartar, baking powder, and salt.
-Pour half of the dry mixture into the standing mixer, and beat on low until it is all combined and looks like a paste.
-Now add in the last half of the dry mixture into the standing mixer and beat again on low until it is all combined and has formed a dough.
-Press plastic wrap directly on top of the dough and place the bowl in the refrigerator to chill for 1 hour.
-After the dough has chilled, cut the dough in half and place one half on a lightly floured counter top, and rewrap the other half and place it back in the refrigerator.
-Preheat the oven to 325 degrees fahrenheit.
-Lightly flour the top of the dough and the rolling pin and roll out to 1/4th inch thick.
-Cut out whatever shapes you would like and then place them on a parchment lined baking sheet about 1 inch apart from eachother.
-Place the sheet pans in the refrigerator to keep cool while you cut out all the other cookies.
-Bake one sheet at a time for 15 minutes.
-Allow to cool COMPLETELY before icing.
ICING RECIPE
INGREDIENTS:
-2 3/4 C organic powdered sugar
-1/4 C choice of champagne or prosecco
-Vegan food coloring of choice, optional
DIRECTIONS:
-Whisk the organic powdered sugar and champagne together until super smooth.
-Add in whatever food coloring and whisk well.
-Pour into a piping bag. If leaving in a container, press plastic wrap gently on top to prevent a skin from forming.
