Hey everyone!! Christmas day is less than a week away an I just had to share these irresistible cookie recipes with you all. So a little back story about these cookies, my sister and I used to make these all the time during the holiday season growing up and I didn’t even remember what was in them. I specifically remember them literally melting in my mouth! I wanted to make them this holiday and asked my mom if she remembered the recipe, sure enough she did! She originally got the recipe from a container of corn starch, they were called ‘melting moment cookies’. So I took that same exact recipe and formulated my own version using tapioca starch instead of corn starch and replacing the butter with vegan butter, as well as coming up with a chocolate mint version! Ingredients
original flavor *makes around 20 cookies
1 C all-purpose flour
1/2 C tapioca starch
pinch of salt
3/4 C vegan butter (softened)
1/2 C powdered sugar
1/2 tsp vanilla extract
Sprinkles for top (optional)
For chocolate mint *makes around 20 cookies
1 C all-purpose flour
1/2 C tapioca starch
pinch of salt
*1/4 C coco powder(sifted)
3/4 C vegan butter (softened)
1/2 C powdered sugar
*1/2 tsp mint extract
1 Tbsp powered sugar for topping
*Note: Each batch makes around 20-22 1 inch cookies. Use a full 1/4 C of coco powder and 1/2 tsp of mint extract for full recipe of chocolate mint flavored (not 2 Tbsp and 1/4 tsp as the vid states) I was making half of the batch! my mistake!
