matcha almond swirl cookies (vegan & gluten-free) Something Vegan hot drink flavored cookie week

RECIPE
3/4 cup organic sugar
1/2 cup vegan margarine
2 Tbsp. almond milk (or other non-dairy milk)
1 tsp. vanilla extract
1 tsp. almond extract
1 1/4 cup white rice flour
1 cup gluten-free oat flour
1/2 tsp. baking powder
1/2 tsp. salt
1 Tbsp. matcha powder

To a bowl, add sugar, margarine, almond milk, vanilla extract, and almond extract. Stir well. Add rice flour, oat flour, baking powder, and salt. Stir until the dough comes together. Divide the dough in half, and put in separate bowls. To one half add matcha powder, and use your hands to work it in until evenly distributed. Roll out each ball of dough separately, between pieces of parchment paper, into evenly sized rectangles. Flip one of the rectangles on top of the other so they are layered. Use the parchment to carefully roll the dough up into a tight roll. Put in the freezer for about 10 minutes. Preheat the oven to 350 degrees Fahrenheit. Remove the dough from the freezer. Carefully slice the roll into cookies, and place on a baking pan. Bake 16-18 minutes. Makes about 24 cookies.

    1. I think you could modify these recipes of mine–again, sorry I don’t have many that fit your needs!

      You could leave the onion and white potato out of this–

      and leave the onion, chili powder, some of the spices, red pepper, chickpeas, and rice out of this-
