Ma’amoul cookies (vegan & gluten-free)

Ma’amoul are a Middle Eastern tradition during Eid, Easter, and Purim. These sweet treats are filled with a variety of fruits and nuts. I’ve chosen two fillings: date with walnut and apricot with pistachio. Mine are extra-special because they’re vegan and gluten-free!
