BROCCOLI CREAM SOUP RECIPE –

Ingredients:
170g broccoli
1/4 cup nutritional yeast
1/2 cup cashews (preferably soaked but not necessary)
1 cup coconut milk
1 cup water or more (I used 2 cups but thought it was too much)
1 tsp vegetable broth powder
1 tsp onion powder
1 tsp garlic powder

Instructions:
1. place all ingredients into a pot and mix well.
2. bring to a boil on high heat on the stove and turn it down to a simmer for about 20 minutes until broccoli and cashews have softened.
3. blend the soup with an immersion blender or place the contents into a high powder blender to blend into a creamy consistency.

  1. I couldn’t do low carb. I would be so hangry. 😄. Your recipes looked good, but you’re right, definitely needs some rice, or noodles. I’m partial to noodles. And you’re also right about it looking like a “diet”. You’re a stronger woman than I. 😊Looking forward to part 2!

I don’t know if someone mentioned this already but after getting those tofu noodles out of the bag, you have to rinse them out otherwise they have a weird smell . i usually microwave them for 3 min and dry them with a paper towel to get the rest of the water out. Hope that helps 🙂 but no they do not taste like real noodles, not even close

  3. I can’t go low carb either, I’m Hawaiian and there’s no way I can go without my rice. I feel so crappy without it.

  4. I feel much better with my vegan diet now that I let myself for more avocados, nuts and seeds, protein rich foods etc. My calorie source is still predominantly carbs though and I LOVE IT. Noodles, grains, porridge, fruit are awesome and good for you. 🙂 When I try to loose weight I cut down on these a bit, but I still eat a fair amount of them. Stuff you eat look yummo but I don’t blame you for your rice craving. 😉

  5. Before going vegan, I was on my mom’s loosing weight plan where I had to eat low carb to lose weight when I was 11 and 12 years old. Food wasn’t too bad but I was too into it to where my mom would tell me to cheat the diet at times. Vegan is so much better.
