Recipe for Vegan Jam Sponge
Ingredients
* 3/4 cup 255g (9oz) Apple sauce (with no added sugar)
* 170g (6oz) self-raising flour
* 70g (2.5 oz) sugar
* 113g (4 oz) softened vegan butter
* 1 level tsp baking powder
* 1 teaspoon vanilla
* 3-4 tablespoons strawberry jam
* Fresh strawberries to decorate
You’ll also need:
* 450g (1lb) loaf tin, greased & lined
Method
* Preheat the oven to 180ºC, gas 4.
* Mix together the butter and he sugar
* Add all the rest of the ingredients and mix until combined
* Place mixture in the prepared tin.
* Bake in the pre-heated oven for about 35 mins, or until golden brown springy to the touch and a toothpick placed in the middle comes out clean
* Leave to cool for 10 minutes
* Loosen the sides of the cake, then lift the cake out of the tin.
* Gently heat jam until runny
* Spoon over cake
* Decorate with strawberries
