These cookies are so dang gooood, but healthy.. so aka, the best of both worlds. ALSO, they are easy and quick to make.. so the best BEST of both worlds, haha.
Here is my macaron video I mentioned:
COOKIE RECIPE (Yields 16 cookies or 8 cookie sandwiches)
INGREDIENTS:
-1 c rolled oats
-1 c dates, tightly packed, and must be super soft
-1/2 c plain, roasted almond butter + more to spread in the middle
-1/2 c raw walnuts
-1/4 c flax seeds
-1/4 tsp nutmeg
-1 1/2 tsp cinnamon
-1/2 tsp sea salt or kosher salt
-1/2 tsp baking soda
-1 1/2 tsp vanilla extract
-1/2 c unsweetened, shredded coconut
-3/4 c dried, plain mixed berries
-1/4 c cold water
DIRECTIONS:
-Preheat oven to 350 degrees fahrenheit.
-In a food processor, combine 1/2 cup of the oats, all of the dates, almond butter, walnuts, coconut, flax seeds, sea salt, nutmeg, cinnamon, baking soda, and vanilla extract, and pulse/blend until it forms a crumbly texture. Scrap down the sides as needed.
-Pour the dough into a bowl and add the water and dried fruit, and mix until evenly combined.
-Roll out 2 tbsp portioned balls, and flatten them into a disc like shape, about 1/4 inch thick. *You can lightly wet your hands to prevent the dough from sticking to them.
-Place the cookie discs on a parchment lined baking tray about an inch apart from each other.
-Bake for 12 minutes and then allow to cool completely.
-Spread about 1 tsp or so of almond butter onto the bottom of one cookie, and then sandwich another bottom of a cookie on top, gently squeezing the two together, and voila!
