RECIPE
10 oz. vegan white chocolate chips (I bought some from veganessentials.com)
1/4 cup vegan gluten-free ginger cookies (I used some that I baked, but store-bought will work)
1 Tbsp. crystalized ginger, finely chopped
Gingerbread people sprinkles
Melt vegan white chocolate chips (I did this in the microwave, 25 seconds at a time, stirring between each interval). Add most of the ginger cookies (reserve some for sprinkling on top), and stir in. Pour onto a pan lined with a baking mat or parchment paper. Spread out into a smooth thin layer. Sprinkle with the reserve cookies, crystalized ginger, and sprinkles. Let harden. Cut into pieces.
