Easy Vegan Carrot Cake | GF, Oil free, Refined sugar free

In this video I make a delicious vegan carrot cake. This carrot cake is healthy and filled with flavor. It’s gluten free, flourless, oil free, and refined sugar free. It’s the perfect vegan recipe for easter. Who doesn’t love a good easter dessert.🐰

Vegan carrot cake recipe

Mix 2 cups oat flour ( blend quick oats in blender)
1/2 cup organic cane sugar
2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground ginger
1/2 tsp sea salt
2 tsp baking powder
1 tsp baking soda
Then mix 1/2 cup non dairy milk to dry mixture ( I used almond milk)
1 cup mashed bananas ( about 3-4 bananas)
2 tsp vanilla extract
Mix then fold in 1/2 cup shredded carrots.
Bake at 350 for 35 – 40 mins.

Cashew cream cheese frosting

1 cup soaked cashews, soak in boiled water for at least an hour
3 tsp lemon juice
3 TBS pure maple syrup
1/4 tsp cinnamon
1/8 tsp sea salt
1/4 tsp vanilla extract
2 TBS non dairy milk( I used almond milk)
1 TBS coconut oil (optional)
