Easy chocolate chip cookies that are only 5 ingredients, vegan, and totally delicious! This a healthy way to satisfy a chocolate chip cookie craving without breaking your calorie budget. My daughter and family were very impressed by this vegan version! Each cookie is 4 Weight Watcher smart points.

INGREDIENTS:
1 15 oz can chickpeas, drained
1/4 cup peanut butter
1/4 cup maple syrup
1 tsp baking powder
1/4 cup chocolate chips, plus more for topping
pinch of salt
*** I don’t really consider water, salt, or pepper an ingredient because it’s standard in every recipe ***

1. Combine the peanut butter, maple syrup, baking powder, and chickpeas in a food processor. Blend until very smooth.

2. Add the chocolate chips and mix well.

3. Line a cookie sheet with parchment paper and scoop out large tablespoons of cookie batter. I got about 10 cookies . Garnish with extra chocolate chips.

4. Bake at 350 F for approximately 22 minutes ( depending on how hot your oven runs) Let the cookie cool completely and firm up before plating. It’s a softer cookie, which is how I enjoy my cookies!
