Can someone tell me about the texture ? Most mozzarella made with tapioca has a snotty texture and grosses me out .
Minimalist Ktchn I never said it had a grainy texture … I said the texture of snot ( pardon my description) but thats exactly what tapioca based vegan cheese feels like in the mouth.
Abby Gayle I know exactly what you are talking about. My recipe does not have that grainy texture. Is very soft and close to real mozzarella cheese. I tested with my friends and they couldn’t tell a difference ,they even preferred mine over the store one. Hope you enjoy 😉

I wonder why you have to soak the cashews , Instead of just blending it up?

You have to soak the cashews to get the right consistency if not it would end up like cashew butter. It taste just like cheese no cashew flavor =)
