Hi everybody! I’m so excited to share this recipe with you guys! My mom and I make these all the time they’re a staple yummy for us. Hopefully this is a recipe everyone can have regardless of food allergy, you can even replace the almond flour or coconut flour if you have nut allergies. I hope you like it! Recipe:
• 2 tablespoons (17 grams) coconut flour, sifted if lumpy
• 1 1/3 cups (133 grams) blanched almond flour
• 1/8 teaspoon salt
• 1/2 teaspoon baking soda
• 1/4 cup MCT oil (or) melted coconut oil
• 1/3 cup Erythritol + a pinch for good luck! (You can also use maple syrup or agave)
• 1 tablespoon lemon zest
• 2 teaspoons lemon juice
Optional Frosting:
• 3 tablespoons coconut oil
• 3 tablespoons honey (or) maple syrup/agave/your choice
• 2 teaspoons lemon juice
• Bake 10 min at 350 makes 8 cookies (or 4 giant ones like my mom likes 🙂
