RECIPE
1/2 cup organic brown sugar
1/2 cup organic granulated sugar
1/2 cup oil (light olive, vegetable, canola, or coconut will work)
1/3 cup almond milk (or other non-dairy milk)
1 tsp. vanilla extract
2 cups gluten-free oat flour
2 cups gluten-free oats
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/2 cup raw pecans, chopped
1/2 cup shredded coconut
1/2 cup vegan chocolate chips (I used some made by Enjoy Life)
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add brown sugar, granulated sugar, oil, almond milk, and vanilla. Stir until well combined. Add oat flour, oats, baking powder, baking soda, salt, and cinnamon. Stir well. Add pecans, coconut, and chocolate chips. Stir well. Scoop dough onto an ungreased cookie pan, and press each cookie dough ball down slightly. Bake 12-15 minutes, or until the cookies start to become golden. Let the cookies cool a little on the pan and then transfer to a cooling rack to cool completely. Makes about 2 dozen cookies.

Looks great, thank you. Why are these called Cowboy Cookies?
I couldn’t find the origin of the name, but that is what a non-vegan version of these were called that I ate growing up.
