RECIPE
3/4 cup organic sugar
3 Tbsp. oil (vegetable, canola, or other neutral oil)
2 Tbsp. espresso or strong coffee
1 tsp. vanilla extract
1 1/2 cup gluten-free oat flour
1/2 Tbsp. finely ground coffee beans
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/3 cup vegan chocolate chips
Drizzle:
1 cup organic powdered sugar
1 Tbsp. espresso or strong coffee
1 tsp. vanilla extract
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add sugar, oil, espresso, and vanilla. Stir well. Add oat flour, ground coffee beans, baking powder, baking soda, and salt. Stir well. Add chocolate chips, and stir in. Scoop and press dough onto a baking pan. Bake 8-10 minutes. Let the cookies cool on the pan a bit, and then transfer to a cooling rack to cool completely. To make the glaze: to a bowl, add powdered sugar, espresso, and vanilla. Whisk well. Drizzle over the cooled cookies. Makes 12 cookies.
