RECIPE
Topping:
1/3 cup organic sugar
1/3 cup all-purpose flour
1/2 Tbsp. ground cinnamon
1/8 tsp. salt
2 Tbsp. neutral baking oil
Filling:
1/3 cup organic brown sugar
1/2 Tbsp. ground cinnamon
Cake:
1 cup non-dairy milk
1/2 cup neutral baking oil
1/2 cup organic sugar
1/4 cup organic brown sugar
1 tsp. vanilla extract
1 tsp. apple cider vinegar
2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
Preheat the oven to 350 degrees Fahrenheit. To make the topping, to a bowl, add sugar, flour, cinnamon, and salt. Stir well. Add oil, and stir until clumps form. Set to the side. To make the filling, to a bowl, add brown sugar, and cinnamon, and stir together. Set to the side. To make the cake, to a bowl, add non-dairy milk, oil, sugar, brown sugar, vanilla extract, and apple cider vinegar. Stir well. Add flour, baking powder, baking soda, and salt. Stir just until smooth. Pour about half of the batter into a greased 8×8-inch square baking pan, and spread smooth. Sprinkle the filling over the batter. Spoon the rest of the batter over the filling, and spread out. Sprinkle the topping on top. Bake 35-40 minutes. Let cool in the pan for a while before cutting. Makes about 9 servings.

I have a gluten-free coffee cake recipe here (using just oat flour in this recipe might work, but you would probably need 2 1/2- 3 cups, but I haven’t tested it.)
