RECIPE
1 cup organic sugar
1/2 cup vegan margarine
1/4 cup non-dairy milk
1 tsp. vanilla extract
1 1/2 cup rice flour
1 cup gluten-free oat flour
1/2 cup black cocoa powder (I used some from King Arthur Flour)
1 tsp. baking powder
1/2 tsp. salt
Sparkle sprinkles
Frosting:
1 cup organic powdered sugar
1 Tbsp. vegan margarine
1 Tbsp. non-dairy milk
1 tsp. vanilla extract
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add sugar, margarine, non-dairy milk, and vanilla. Stir well. Add rice flour, oat flour, black cocoa powder, baking powder, and salt. Stir well. Add sparkle sprinkles, and stir in. Roll the dough out between pieces of parchment paper. Cut out into circles, and place on a cookie pan. Re-roll and cut the dough, until all of it has been used. Bake 10 minutes. Transfer to a cooling rack to let the cookies cool completely. To make the frosting, to a bowl add powdered sugar, vegan margarine, non-dairy milk, and vanilla extract. Stir well. Transfer the frosting to a piping bag, or a zip-lock. Pipe constellations onto the cooled cookies (I looked at a constellation map to do this). Makes 24 cookies.
