Cookie Dough Ingredients:
2 1/2 cups cooked chickpeas (If you are cooking from raw, make sure to soak them in water overnight)
1/2 cup peanut butter
3 teaspoons vanilla extract
8 TBLS maple syrup
1/2 cup vegan sugar
1/2 cup chocolate chips
Tiny pinch of Himalayan pink salt
Put all of the ingredients except chocolate chips in a food processor and process until smooth. Stir in chocolate chips by hand. Ladle into casserole dish or container. Refrigerate and enjoy.
Cookie Ingredients
1 3/4 cups cookie dough
3/4 cup gluten free oat flour
1/4 cup ground flax
3 TBLS coconut oil
Mix all of the ingredients in a food processor. Then roll into balls and place on parchment paper on a cookie sheet. Slightly flatten the cookies if you like.
Bake at 385F for about 35 minutes. Cool and enjoy.
