RECIPE
3/4 cup organic sugar
1/2 cup vegan margarine
1 Tbsp. non-dairy milk
2 tsp. vanilla extract
1 1/4 cup rice flour
1 cup gluten-free oat flour
1 tsp. baking powder
1/2 tsp. salt
White icing:
1/2 cup organic powdered sugar
1/2 Tbsp. vegan margarine
1/2 Tbsp. non-dairy milk
1 tsp. vanilla extract
Black icing:
2 cups organic powdered sugar
2 Tbsp. non-dairy milk
1/2 tsp. vanilla extract
Black food coloring
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add sugar, vegan margarine, non-dairy milk, and vanilla. Stir well. Add rice flour, gluten-free oat flour, baking powder, and salt. Stir well. Roll dough out between two pieces of parchment paper. Cut out into squares, and place on a baking pan (re-roll, and cut the dough until it has all been used). Bake 10 minutes. Transfer to a cooling rack to cool completely. To make the white frosting: to a bowl add powdered sugar, vegan margarine, non-dairy milk, and vanilla extract. Stir well. Transfer to a piping bag, or zip-lock. To make the black frosting: to a bowl, add powdered sugar, non-dairy milk, vanilla, and black food coloring. Stir well. Frost each cookie with the black frosting. Let the frosting harden. Pipe designs or text with the white frosting (I was going for a back-to-school theme, but you can pipe whatever you like). Makes 12 cookies.
