These cheesecakes are all based around cashew nuts so are dairy-free and suitable for a raw vegan diet. They are also all gluten free and refined sugar-free.
Even if you are not into healthy vegan cheesecakes then still try this recipe as regardless of their health properties everyone always seems to like them.

This looks great! Is there any way to have a more ‘firm’ cake at room temperature? Perhaps with more coconut manna/oil, less liquid, or with a thickener (eg. xanthan gum)?
I’m going to try making these with sunflower seeds as cashews are very expensive! Thankfully raw sunflower seeds have a very mild flavour..

To make them really firm you want to use a jug tybe small blender so only add a drop of water at a time so you get just enough for it to blend. Also you could add more coconut oil but if it’s summer that will melt. I don’t really use xanthan gum but some buckwheat does a wonderful job at thickening it – only down side is it doesn’t look as good but still tastes great
