  1. Thanks to you Gretchen my dessert was literally to die for! I took the best of your two deserts and made them one!

    I used your cheesecake recipe without the crust and baked it in a cake pan, let cool and mixed with whip cream in processor to make more fluid, then I spread it in this sponge cake recipe you have here and added broken pieces of cannoli roll shells and chocolate chips, rolled up and topped with ganache and decorated.. and omg.. Gretchen, this was so fantastic that the non vegans were RAVING how great it was and how they wanted me to make it for every future occasion! Lol! So I guess you can call it a vegan cannoli cheesecake roll! Thanks for the recipes and for inspiring me!

    1. to me this resembles traditional ricotta in texture and viscosity. Some people make their won almond ricotta from almond milk, same way you would make it homemade with cow milk, by separating the curd.
      Here are the ingredients in the Tofutti Brand: WATER, EXPELLER BLEND OF NATURAL OILS (PALM FRUIT, SOYBEAN AND OLIVE),
      NON-GMO (TOFU, SOY PROTEIN), MALTODEXTRIN, VEG LACTIC ACID, NATURAL
      BLEND OF GUMS (LOCUST BEAN, GUAR, CELLULOSE, XANTHAN AND CARRAGEENAN),
      BROWN RICE, AGAR AGAR, VINEGAR, ORGANIC SUGAR, VEGETABLE MONO AND
      DIGLYCERIDES, SEA SALT.
