Dry Ingredients:
• 1 Cup All Purpose Flour
• 1 Cup Desiccated/Shredded Unsweetened Coconut
• 1/2 Teaspoon Salt
• 1 Teaspoon Baking Soda
• 1 Teaspoon Cinnamon
Wet Ingredients:
• 1 Cup Brown Sugar
• 1/2 Cup Vegan Butter
• 3 Tablespoons Maple Syrup
• 1 Teaspoon Vanilla Extract
Other Ingredients:
• 1 1/2 Cup Rolled Oats
• 1 Cup Raisins (Optional)
• 1 1/2 – 2 Tablespoons Non Dairy Milk
Instructions:
1. Mix dry ingredients. Set aside.
2. Cream butter and sugar with a hand mixer until soft.
3. Mix in remaining wet ingredients, dry ingredients, rolled oats, and raisins. Add milk as needed to press the mixture into balls. Mixture will be crumbly and seem too dry, but should be sticky enough to hold their shape.
4. Bake for 15 minutes at 350 F
5. Remove from oven and let cool for a few minutes
