RECIPE
3/4 cup brown sugar
1/4 cup apple cider
2 Tbsp. oil (light olive, canola, or vegetable)
1 tsp. vanilla extract
1 3/4 cup gluten-free oat flour
1 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. ground allspice
1/4 tsp. salt
1/8 tsp. ground cloves
1/2 cup apple, finely chopped
Glaze:
1 cup organic powdered sugar
1 1/2 Tbsp. apple cider
1/4 tsp. ground cinnamon
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add brown sugar, apple cider, oil, and vanilla. Stir well. Add oat flour, baking powder, cinnamon, allspice, salt, and cloves. Stir until well combined. Add apple, and stir in. Use a small cookie scoop to scoop the dough onto a cookie pan, and press down lightly. Bake 16-18 minutes. Transfer to a cooling rack to cool completely. To make the glaze: put the powdered sugar in a bowl, and add apple cider, and cinnamon. Stir until completely combined. Drizzle over the cooled cookies. Let the cookies sit until the drizzle hardens. Store in an air-tight container. Makes one dozen cookies.
