In this video I make 4 ingredient vegan energy bars. This are very easy to make. I used the same ingredients I use to make samoa girl scout cookies vegan or the caramel delights. The dates give it a caramel taste and the toasted coconut and dairy free chocolate chips make these energy bars come to life.

Recipe

Set oven to 325 then add 1/2 cup shredded unsweetened coconut to sheet pan. Put coconut in oven mixing every 5 mins. 10-15 mins total.Watch carefully because it burns quickly.
Add 2 cups of dates to a food processor and 2 tsp of water ( I used unsweetened vanilla almond milk ) ( I soaked the dates for about 10 mins to softened them.) Pulse the dates and then add 1 cup of walnuts.(optional) pulse this with the dates. Add mixture to a bowl and then add 1/2 dairy free chocolate chips and 1/2 cup toasted shredded coconuts. Spread mixture onto some parchment paper and drizzle melted chocolate on top. Then put in freezer for about 30 mins or fridge for at least an hour. Cut into rectangles or squares. Then eat! Store remainder of the energy bars in the fridge.
