Hey guys, for today’s video I thought I would share some of my favourite vegan food swaps to help make your dinners easy, delicious, and vegan all under 15 minutes. From peanut stir fry and mushroom quesadillas, to a mind blowing vegan pasta Bolognese, these recipes will have you coming back for. Share this video with a friend who might think going vegan is hard 😉
Recipes:
Easy Peanut Stir Fry
Asian style noodles of choice for 4 people 1 large onion, chopped
1 large carrot, cut into half moons
1 red pepper, cubed
1⁄2 block firm or smoked tofu, cubed, optional
2 tbsp rice vinegar 2 tbsp soy sauce
3 tbsp peanut butter 1 tbsp sesame oil
1 tsp garlic powder 1/4 tsp ground ginger
Mushroom Spinach Quesadillas
1 tablespoon olive oil
1/2 red onion, chopped
Salt, to taste
3 portobello mushrooms, thinly sliced
1 cup spinach, roughly chopped
1/2 lime, juiced
2 1/2 cups shredded vegan cheese of choice 2 avocados
1⁄4 cup cilantro
4 flour tortillas
Salsa of choice
Vegan Bolognese
3 Tbsp olive oil
1 large white onion, chopped
Sea salt, to taste
3 cloves garlic, minced
2 cups veggie ground round
1⁄4 tsp dried thyme
1⁄4 cup fresh basil, chopped & divided (use 1/2 tsp dried if you do not have fresh) 1-28oz can of diced tomatoes
Black pepper, to taste
Spaghetti for 4, to serve

Not at all a fan of mushrooms but that quesadilla looked so good I might give it a try. just might up enjoying mushrooms for the first time in my life.

Thought I would pass a little info your way.
Mirepoix is,
2 parts onion
1 part celery
1 part carrot. For example, 2 cups, 1 cup, 1 cup.
When cooking (sweating ) off the onions as you did in the video, try 11 minutes at around a 3 or 4 on the stove top dial.
Same method with the mirepoix whenever cooking with it. Soup, sauce ext. Even when cooking a Mirepoix cake. LOL
So I made a Marinara sauce with pasta elbows, quinoa and chia seeds. Sat down to watch youtube and your show was first on the my notification list.>;-)
I am a fan, been watching for a while now. I always learn from you. Thought I would pass on this info. Minus the Mirepoix cake LOL

Not a beginner but that stir fry has my name on it lol this is good for beginners/people short on time/tired people’s 😆
These are great for beginners but also include a lot of things you should already have in your fridge if you do weekly grocery shopping; I use pretty much all of those things on a weekly basis anyway. Plus, these are super cheap versions of some more “complicated” recipes, so that’s a plus for people on a budget (like me).
