This is the spongiest vanilla cake you’ll ever make! It is Gluten free and refined sugar free, it doesn’t take too long to make and it is super delicious 😄
Ingredients:
*2 cups Gluten free flour
*1 tsp Baking powder
*1 tsp Baking soda
*Pinch salt ( we used Himalayan)
*1 cup Plant-based milk
*I cup vegan yoghurt
*1 tsp Vanilla extract
*1 cup Alpro whipped cream
*2 TBSP Cocoa powder
*1 packet Bio vegan whipped cream stabiliser
1. Preheat the oven to 180 degrees Celsius
2. Mix all the dry ingredients together in a bowl ( except for the cocoa powder and stabiliser)
3.Add all the wet ingredients ( expect for whipped cream) in a separate bowl.
4. Add the wet to the dry and mix well removing all clumps
5. Grease a baking tin with some coconut oil and add the cake mixture to it.
6. Bake in the oven for 40-50 minutes or until a fork comes out clean. If the top gets too brown, cover with some tin foil until fully baked.
7. Meanwhile, Add the whipped cream, cocoa powder and stabiliser to a bowl and whisk together until an airy mixture has formed.
8. Add the whipped cream to the cooled cake and decorate as you like. ( We cut ours in half and added some of the cream in the centre)
