FOR 10 TO 12 MUFFINS (Pumpkin Raisins)
3/4 cup pumpkin puree
1.5 cup soy milk
1 tsp vanilla
1/3 cup brown sugar
2 cups whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1 pinch of salt (option)
raisins
pecans (option)
1) Mix together the wet ingredients, and add brown sugar
2) Add the dry ingredients
3) Add raisins (as much as you want)
4) Option : you can crush some pecan nuts with some brown sugar in your food processor, and add the “crumble” on the top of your muffins
5) BAKE 20 to 25 mins to 350 F°
FOR 9 COOKIES “Pumpkin Walnuts”
1/2 cup pumpkin puree
1/4 cup canola oil
1 tsp vanilla
1/3 cup brown sugar
3/4 cup whole wheat flour
1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/4 c tsp ginger
1/2 cup oats
walnuts
1) In your food processor whip together the pumpkin puree, canola oil, vanilla and sugar
2) Add flour, baking powder, cinnamon, nutmeg and ginger
3) Add oats, and walnuts to finish
4) Made about 9 cookies, dought have to stay little bit sticky
5) BAKE 10 to 12 mins to 350 F°
