Vegan Paleo Chocolate cake

Let me start by saying how rich this cake is. The texture of the whipped cream smooth and airy. The flavor components of the cake are essentially dark chocolate, coffee, and vanilla. Eating this cake, it’s like having a big giant brownie, soft, moist but not too much, and delicate. To top it off, a drizzle of dark chocolate. Does that sound like a good cake to you? It does to me. For this cake, I used a little bit of natural food color. Just to give it a hint of pink. What I love about this cake, is that it’s so simple to make. Just mix the dry ingredients and then the wet ingredients. Like most vegan paleo cake the trick to having a fluffy soft texture is knowing when to mix your vinegar with the leavening agents. For this cake, if you mix the batter too soon, you will end up with a flat cake. Remember, do not mix the batter if your oven it’s not preheated. Fluffy vegan baked goods require leavening agents such as baking powder and/or baking soda. Make sure they are fresh, as they do expire and old leavening agents will not work as well. As for the decoration on the cake, I used tip number 1A or any other big round tip will work. Make sure, like shown in the video, to have your piping bag at a 90-degree angle. Squeeze until you have a big dot, stop the pressure and pull up your piping bag. You should be making medium size kisses. This recipe makes two rounds 6″ cakes, 1.5″ tall.
