Vegan Molasses Cookies (Mini Batch of 6)

Recipe:

Dry Ingredients:
135 grams wheat flour
1/4 teaspoon baking soda
1 1/2 teaspoons cinnamon
3/4 teaspoons nutmeg
1/4 teaspoon salt

Wet Ingredients:
55 grams vegan butter
95 grams brown sugar
30 ml molasses
1/2 egg replacer
1/2 teaspoon vanilla extract

Topping:
25 grams granulated sugar

Instructions:
Whisk the dry ingredients together until combined and set aside.

Beat the butter and brown sugar on high speed until creamy.

Add the molasses, egg replacer, and vanilla extract and beat until combined.

Slowly mix the dry ingredients into the wet ingredients until just combined.

Roll into 6 balls and freeze for at least 30 minutes.

Preheat oven to 350°F.

Remove balls from freezer and roll in granulated sugar.

Bake for 12 minutes, until tops are cracking.
