Recipe:
Dry Ingredients:
217 grams (1 and 3/4 cups) wheat flour
1/2 teaspoon baking soda
1 tablespoon cinnamon
1 and 1/2 teaspoons nutmeg
1/2 teaspoon salt
Wet Ingredients:
113 grams (1/2 cup) vegan butter
150 grams (3/4 cup) brown sugar
60 ml (1/4 cup) molasses
1 egg replacer
1 teaspoon vanilla extract
Topping:
50 grams (1/4 cup) granulated sugar
Instructions:
Whisk the dry ingredients together until combined and set aside.
Beat the butter and brown sugar on high speed until creamy.
Add the molasses, egg replacer, and vanilla extract and beat until combined.
Slowly mix the dry ingredients into the wet ingredients until just combined.
Roll into 16 balls and freeze for at least 30 minutes.
Preheat oven to 350°F.
Remove balls from freezer and roll in granulated sugar.
Bake for 12 minutes, until tops are cracking.
