Hi guys! I went overseas recently and did a huge vegan meal prep for my fiancé so he would have lots of healthy vegan meals ready to go for work or dinner. I made three different dishes at the same time – a vegan Thai green vegetable curry, vegan goulash with smoked tofu and some vegan Indian dahl. Very simple but all very yummy. One thing: I’d try to avoid cooking bell peppers (if that’s what I see)
because they are among the best food to lose nutritional value with
cooking.
